Servings: 2-4
Ingredients:
- 2 lbs ground chicken
- 6 cups kale (deveined and chopped into bite-sized pieces)
- 3 cloves garlic minced
- 1/4 red onion thinly sliced + shaved carrot
- 1/4 C rice vinegar
- 1 tbs maple syrup
- 6 green onions sliced
- 1 tbsp ginger minced
- 1 tbs coconut sugar
- juice of 1 lime
- fresh mint/basil for garnish
Directions:
- Add 1 tbs olive oil to large sauce pan over medium heat. Add 1/2 of the garlic and cook for 1 min
- Add chopped kale and cook down for 3-5 min until wilted + remove from pan
- In the same pan, add another drizzle of olive oil and cook chicken for about 5 min
- Add garlic, ginger, green onion, lime and coconut sugar
- Stir to combine and cook for 5 more min for flavors to meld
- Remove from heat and stir in kale
- Serve over cauliflower rice with your pickled veggies and fresh herbs to garnish!
Notes:
- Serve over cauliflower rice or any LID approved grain
- Quick pickle your red onion and carrot by soaking in the rice vinegar + maple syrup – set aside until ready to plate with finished meal
