LID recipe: chicken larb bowl

Servings: 2-4


  • 2 lbs ground chicken
  • 6 cups kale (deveined and chopped into bite-sized pieces)
  • 3 cloves garlic minced
  • 1/4 red onion thinly sliced + shaved carrot
  • 1/4 C rice vinegar
  • 1 tbs maple syrup
  • 6 green onions sliced
  • 1 tbsp ginger minced
  • 1 tbs coconut sugar
  • juice of 1 lime
  • fresh mint/basil for garnish


  1. Add 1 tbs olive oil to large sauce pan over medium heat. Add 1/2 of the garlic and cook for 1 min
  2. Add chopped kale and cook down for 3-5 min until wilted + remove from pan
  3. In the same pan, add another drizzle of olive oil and cook chicken for about 5 min
  4. Add garlic, ginger, green onion, lime and coconut sugar
  5. Stir to combine and cook for 5 more min for flavors to meld
  6. Remove from heat and stir in kale
  7. Serve over cauliflower rice with your pickled veggies and fresh herbs to garnish!


  • Serve over cauliflower rice or any LID approved grain
  • Quick pickle your red onion and carrot by soaking in the rice vinegar + maple syrup – set aside until ready to plate with finished meal
